Meringue Valentine Kisses Recipe
Makes about 5 dozen tiny Valentine Kisses cookies
2 egg whites
½ teaspoon cream of tartar
1/8 teaspoon salt
Red food coloring
½ cup granulated sugar
Red decorating sugar
1 Beat egg whites, cream of tartar, salt, and a few drops red food coloring until foamy white and double in volume in a medium-size bowl.
2. Sprinkle in granulated sugar, 1 tablespoon at a time, beating all the time until sugar completely dissolves and meringue stands in firm peaks. Beating will take about 10 minutes in all with an electric beater.
3. Attach a plain or star tip to a pastry bag; spoon meringue into bag. Press out into kisses, 1 inch apart, onto foil-covered large cookie sheets. Sprinkle with red sugar.
4. Bake in very slow 250 oven for 30 minutes or until firm but not brown. Remove carefully from foil to wire racks; cool completely.
