I Love You Chocolate Pudding
½ cup sugar
2 tablespoons cornstarch or all purpose flour
Dash salt
2 ¼ cups milk
2 beaten egg yolks or 1 beaten egg
1 tablespoon butter or margarine
1 ½ teaspoons vanilla
In a medium saucepan stir together sugar, cornstarch or flour, and salt/ stir in milk, along with ½ cup semi-sweet chocolate pieces. Cook and stir over medium heat till thickened and bubbly. Reduce heat, then cook and stir 2 minutes more. Remove from heat.
Gradually stir about half of the hot mixture into egg yolks or egg. Return to mixture in saucepan. If using egg yolks, bring to gentle boil; if using whole egg, cook till nearly bubbly but do not boil. Reduce heat. Cook and stir 1 to 2 minutes more. Remove from heat. Stir in butter or margarine and vanilla. Pour mixture into a bowl. Cover surface with clear plastic wrap or waxed paper. Chill without stirring.
