1. Chocolate Chip Cookie Recipe
2 ½ cup all-purpose flour
1 teaspoon baking soda
½ cup butter or margarine
½ cup shortening
1 cup packed brown sugar
½ cup sugar
2 eggs
1 ½ teaspoon vanilla
1 12 oz package (2 cups) semi-sweet chocolate pieces
1 cup chopped walnuts or peacans
Stir together flour and baking soda. In a large mixer bowl beat butter and shortening for 30 seconds. Add brown sugar and sugar; beat till fluffy. Add eggs and vanilla; beat well. Add dry ingredients; beat till well combined. Stir in chocolate and nuts. Drop dough from a teaspoon onto an ungreased cookie sheet. Bake in a 375 oven for 8 to 10 minutes or till edges of cookies are firm and slightly browned. Cool about 1 minute. Remove from cookie sheet; cool on a wire rack. Makes about 72 cookies.
Double Chocolate Chip Cookies: Prepare Chocolate Chip Cookies as above, except stir ½ cup unsweetened cocoa powder into dry ingredients, reduce all-purpose flour to 2 cups, and increase sugar to 1 cup.
Oatmeal Chocolate Chip Cookies: Prepare Chocolate Chip Cookies as above, except reduce all-purpose flour to 1 ½ cups. Stir 2 cups quick-cooking rolled oats into mixture at the same time the flour mixture is added.

2. Chocolate Chip Cookie Recipe
½ cup butter
¼ cup sugar
1 beaten egg
¾ cup all-purpose flour
1 ¼ teaspoons baking powder
¾ teaspoon salt
1 package (6 ounces) semisweet chocolate chips
Beat the butter and sugar together until light and fluffy. Add the egg and beat thoroughly. Sift the flour with the baking powder and salt and fold into the creamed mixture with the chocolate chips.
Drop by teaspoon, a few inches apart, onto a greased baking sheet. Bake in a 350 oven for 15 to 20 minutes. Cool on a cookie rack. Makes 25 to 30 Chocolate Chip Cookies.
Chocolate Cookies Recipe
½ cup all-purpose flour
1 teaspoon baking powder
Pinch of baking soda
6 tablespoons butter
¼ cup brown sugar
3 tablespoons dark corn syrup
½ cup semisweet chocolate chips
Sift the flour, baking powder and baking soda into a mixing bowl. Add the butter in pieces, and beat on low speed till the mixture resembles bread crumbs. Mix in the brown sugar and corn syrup; stir in the brown sugar and corn syrup; stir in the chocolate chips.
Form into balls about the size of walnuts; place slightly apart on a greased baking sheet. Press gently with a spatula to flatten slightly. Bake in a 375 oven for 15 minutes, till golden brown. Transfer to a rack to cool.
Makes about 24 Chocolate Cookies.
Recipes for Mint Chocolate Chip Cookies
Mint Chocolate Chip Cookies
1 1/3 cups sugar
34 cup margarine or butter, softened
1 tablespoon finely chopped mint leaves
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 package (10 oz) mint chocolate chips
Heat oven to 350. Mix sugar, margarine, mint, baking soda and salt. Stir in chocolate chips.
Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 11 to 13 minutes or until golden brown. Cool slightly; remove cookies from cookie sheet. Makes about 3 ½ dozen Chocolate Chip Cookies.
Recipe for Fresh Mint Chocolate Chip Cookies
Drop dough by level teaspoonfuls onto ungreased cookie sheet. Bake 6 to 8 minutes or until golden brown. Makes about 10 dozen Chocolate Chip Cookies.
* You can substitute ¼ mint extract for the chopped mint leaves.

Mint Chocolate Macaroons
1-1/2 cups (9 ounces) Mint Chocolate Morsels
3 large egg whites
1/4 cup granulated sugar
2-1/4 cups (7-ounce package)
flaked or shredded coconut
Preheat oven to 350° F. Line baking sheets
with foil or parchment paper.
Microwave morsels in small, microwave-safe bowl on high (100% power) for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Cool to room temperature. Beat egg whites in large mixer bowl until foamy. Gradually add sugar; beat until stiff peaks form. Fold in melted chocolate and coconut. Drop by rounded tablespoon onto prepared baking sheets.
Bake for 15 to 18 minutes. Cool on baking sheets for 5 minutes; remove to wire racks to cool completely. This recipe makes about 2 1/2 dozen cookies
